Review #621 (2018)
This is not a whisky yet. But it is organic, and it is matured in small ex-Bourbon casks, rebuilt from larger barrels, and then finished in PX Sherry casks. Sweet white fruits, oak and prunes in the smell. Hints of burned caramel and vanilla as well. Very light and clean.
Some light watery oak juice at first in the taste. Overripe plums and dates. The finish seems a bit weak/watery, due to low ABV. Some vanilla sweetness and white fruits comes forward and mixes with the darker fruits.
This is still a bit young, and when you bottle something this young, you definitely need at higher strength! It just becomes too weak and the flavours, that isn’t that rich, can´t carry the whisky yet… With that said, I’m very excited to see what the future will bring. I will give this 80/100 (21/19/20/20).
